We do not use means that overheat the hazelnuts during processing, because too much heat could alter the organoleptic qualities, oxidising the fats or causing the natural oils to separate from the fibres. Our hazelnut paste is soft, creamy, velvety, uniform, without additives, thickeners or homogenisation. This is a naturally sweet cream because it contains only the sugars of the hazelnut, which are about 4%.
